Carrot Cake Pancakes...our favorite!

Pancakes are made pretty often around here. We like them regular, we like them with buttermilk, we like them with blueberries, and we like them with carrots. You may think this is odd...but if you like carrot cake, these are just as delicious! I normally make a double batch which calls for 4 cups of shredded carrots (this about 1 normal size bag of regular carrots). Here is the recipe if you want to try them. Serve with butter and honey...ENJOY!

1 1/4 c. flour

2 t. baking powder

2 t. cinnamon

1/4 t. salt

1 t. nutmeg

1/4 c. brown sugar

3/4 c buttermilk (I have used whole milk and it works just as well)

1 T canola oil

1 1/2 t. vanilla

2 large eggs, lightly beaten

2 cups finely grated carrot
